Strawberry Rhubarb Crisp

If you think you DO NOT like rhubarb, try downing it with some strawberries. You’ll be a believer in no time. Especially if some sort of crumb topping is involved. And ice cream. When I made this Strawberry Rhubarb Crisp the other day, Brooke was like, “What’srhub…ooh ice cream!!” That’s literally how our conversation went before she tried this. And whaddya know, she was asking for seconds.

Crumble vs. Crisp vs. Cobbler

Believe it or not, crumbles, crisps, cobblers, etc. are really easy desserts to make for company, the holidays, or any weeknight. Just about any fruit can be used and odds are you’ll have everything on hand for the topping in your pantry. The main difference between a crumble, a crisp, and a cobbler is the toppings! Crumbles are made with a streusel topping, a crisp adds oats in the streusel topping and a cobbler has a biscuit-like topping!Who knew!?

The Strawberry Rhubarb Crisp recipe I’m posting today is extra lazy easy because I started with a can of Strawberry Rhubarb Lucky Leaf pie fillingwhich I actually already had on hand. #winning It makes a great base for that yummy crumb topping, plus saves some prep time. If you’re looking for a quick Easter dessert, fruit crisps might be a stellar option for you.

Or if you just like dessert, fruit crisps might be a stellar option for you.

Main Ingredients

I use a few shortcuts to make these tasty little Strawberry Rhubarb Crisps! Here’s what you need:

  • Strawberry Rhubarb Pie Filling –this is the main shortcut I use for this recipe. Canned pie filling! If you rather make your own filling, feel free. I found mine at Walmart and it was the Lucky Leaf Brand.
  • Fresh Strawberries –the fresher the better! Wash, hull and chop these up. Adding fresh strawberries helps, even more, to balance the tartness from the rhubarb.
  • Flour, Sugar, Oats, Softened Butter, and Salt –this is to make the oat streusel topping! If you’d rather make a crumble instead of a crisp, omit the oats. More info on the differences below!

How to Make Strawberry Rhubarb Crisp

This Strawberry Rhubarb Crisp recipe is a fairly easy one, prepare the streusel, add the rhubarb pie filling, layer with strawberries, then top with the prepared streusel. Bake until hot and gooey! For the full recipe, see the recipe card below.

  1. Start by making the oat streusel topping. This is just flour, sugar, oats, and butter. And a pinch of salt. Smoosh the butter into the other ingredients. Set aside.
  2. Now grab 4 ramekins, cute quiche dishes, a 9×9 glass dish, whatever… and your pie filling too! The canned Strawberry Rhubarb filling is a limited edition flavor so be sure to pick up one next time you’re shopping. Try to divide it evenly between your four dishes.

  1. Top with a few fresh strawberries and then the prepared streusel topping.
  2. You’re going to want to set these on a baking sheet to catch the drips, FYI. Bake these off in a hot oven for about 25 minutes or until things get all hot and bubbly.

Can I make this in a 9×13 pan?

YES! If you need to make a larger crisp consider using a 9×9 glass dish or double the recipe and use a 9×13 dish! Bake for 5 minutes longer (or until the streusel is golden brown). Scoop and serve alongside ice cream.

Just note, your servings might not be as pretty or clean as the little ramekins provide (and that’s saying something, *ahem* see photos below).

How to Serve Strawberry Rhubarb Crisp

Obviously, get a scoop of vanilla bean ice cream up on top of your strawberry rhubarb crisp while it’s hot and then dive in! Pretty sure all things warm and fresh out of the oven deserve a healthy scoop of ice cream.

Crisps. Brownies. Thanksgiving turkey. Ya know, all the normal stuff.

OR top with homemade whipped cream!

If you have any leftovers, they will stay good for about a day or two in the fridge, covered. After that, the streusel topping starts to get soggy and gross. So make these fresh!
