This Oven Roasted Acorn Squash Recipe is the perfect comfort food to make, and your house will also smell amazing! I love finding new ways to cook squash so when a girlfriend told me to try Acorn Squash this way with maple syrup and brown sugar, my curiosity peaked.

As my girls have gotten older, they are into all roasted vegetables, including brussels sprouts; they have grown to love this as they have gotten older! My son loves it because the sugar and maple syrup taste sweet. This squash is so easy to make and requires a few ingredients.

Oven Roasted Acorn Squash Ingredients:

Acorn Squash-If you can’t find acorn squash, you can use butternut squash or a delicata squash for this recipe.

Butter– Either salted butter or unsalted butter will work on this recipe; it comes down to personal taste.

Olive Oil Just a smidge is all needed; you can use a Misto or oil sprayer for this recipe.

Brown Sugar– Light brown sugar works best for this; you will need a small sprinkling.

Maple Syrup– You can use store-bought or pure maple syrup to drizzle on the squash halves.

Line a baking tray, baking sheet, cookie sheet, or baking dish with foil and spray lightly with a nonstick spray.

Cut Your acorn in half on a cutting board or cutting surface; you will want a sharp knife.

Deseed the squash; using a large spoon to scope the seeds out is the easiest way to do this.

Once your seeds are removed, take a Misto and lightly spray the inside of the acorn squash. You can also use a basting brush to spread the oil around.

You can also cook in slices and halves, and the slices may cook faster than the halves.

I love my Misto because it makes a great alternative to nonstick spray without extra chemicals! I often use it to spray my crockpot and sheet pan to help things not stick. Add the oil and give it a couple of pumps, and the olive oil will spray.(Amazon has amazing options -> here)

Next, place 2 Tablespoons of butter into each rounded-out part of the acorn squash.

Lightly drizzle maple syrup on both halves of the acorn squash.

Put in the oven for 35 minutes at 400 degrees. Test the doneness with a fork.

You can slice the cooked squash into squash slices for serving, the butter mixture will have melted in the middle to flavor the squash.
