Ooooo I’m excited to bring a gluten free coffee cake to you guys this week. Coffee cake is a way to my heart. Over the years I’ve found that I really love a hefty slice of coffee cake to go with a cup of tea.

I know I should enjoy coffee with this since it is a COFFEE CAKE… I’m a tea drinker though. Ha!

We made our applesauce spice cake to close out on the holidays and it brings me back to my childhood just like this Gluten Free Sour Cream Coffee Cake.

My mother would buy these pre-made coffee cakes every single weekend when growing up. That coffee cake would vanish in one day because of me. My love of coffee cake goes back decades.

So when my grandmothers recipe book came in my possession I couldn’t resist and HAD to make sure Sour Cream Coffee Cake, of course with a few dietary modifications. 😉

Which would not be possible at all to make a perfect gluten-free version of this recipe without Bob’s Red Mills help.

The 1-1 Gluten Free Baking Flour is absolutely amazing for cakes and cookies. It is hands down my favorite gluten free flour to use. I’ve even had luck using it in our No Yeast Gluten Free Cinnamon Rolls as well!

How to make this Gluten Free Coffee Cake ALSO Vegan

This cake can easily be made vegan by swapping the eggs for Bob’s Red Mill Egg Replacer. I found that it makes the cake just a bit more denser but definitely still an enjoyable cake.

This gluten-free sour cream coffee cake is already a little dense of a cake with the oil but the sour cream helps make it tender and moist. So do keep that in mind it is not going to be a light airy and fluffy cake like our Gluten-Free Chocolate Cake.

Couple Recipe Notes for our Gluten Free Sour Cream Coffee Cake

The batter is VERY thick. Don’t be put off by that, you haven’t done anything wrong. It’s just a thick batter.

How to Make the Coffee Cake Crumble

The crumble is definitely one of my favorite things about this cake.

You’ll want to combine the brown sugar and cinnamon together. My favorite thing to do is pour half the batter into the bundt pan and sprinkle half of the crumble in and then pour in the remaining batter.

Can’t go wrong with a little brown sugar cinnamon surprise in the center of each bite.

Is there a differencebetween a bundt cake pan and tube pan?

  • Tube Pansgenerally have no grooves, feature a flat bottom and larger circle in the middle. It is designed for dense cakes like pound cake and in this case, our Gluten-Free Sour Cream Coffee Cake.
  • Bundt Cake Pan has a few grooves to it and a smaller circle in the middle and designed for light and airy desserts, like angel food cake.

Note: I have attempted to make this in a 9×13 pan and the results were a bit of a struggle. I have trouble with the cake cooking through.

You have your pans backwards — tube pans are for angel food cake, bundt pans are for heavier/denser bundt cakes

mine turned out to dry. I’m thinking maybe because I did use the tube pan instead of the bundt pan as before when i made this with regular flour I always used the bundt pan. Also I cut back a tad on the sour cream, as I used dairy free sour cream and didn’t quite have a full cup. I also think this recipe has way too much sugar in it, that could be cut back to at least a 1/2 – 3/4 cup on the brown sugar.

FAQs

What does adding sour cream to a cake batter do? ›

Sour cream is one of the fattiest dairy products; the extra fat content (for example, adding sour cream to a cake instead of milk) will make the cake moister and richer, says Wilk. "Fat, in any form (butter, lard, cream, etc.) shortens gluten strands, which essentially leads to the most tender baked goods," she adds.

How do you keep gluten-free cake moist? ›

Add extra liquid: Gluten-free flours tend to absorb more liquid than regular flour, so you may need to add more liquid to your recipes to compensate. This can help to keep your baked goods moist and prevent them from becoming dry and crumbly.

Why is my gluten-free cake rubbery? ›

Because gluten-free batters contain more liquid than traditional versions, they typically take longer to bake. If you remove them from the oven too soon, you may develop a gummy, mushy texture.

Why are gluten free cakes so dry? ›

Some gluten free flours will produce a cake which is on the dry side. This might be due to the lack of gluten but can be for many other reasons. Lots of gluten free flour is rice based and this can result in a dry and slightly gritty texture.

Can I use sour cream instead of heavy cream in a cake recipe? ›

You can also experiment with a combination of whole milk and yogurt or sour cream, which will add a bit of body to your baked goods. While buttermilk is actually lower in fat than whole milk, its thicker consistency makes it a good substitute for heavy cream in your baked goods.

Can I use sour cream instead of oil in cake mix? ›

Mayonnaise, the least likely of the bunch, actually gives the closest result to having used oil, and it retains the flavors of your cake or whatever baked good you are creating very well! Yogurt and sour cream also work in a pinch, but do change the flavor profile a tad.

What is the secret to moist gluten-free baking? ›

Moisture. There are many ways to increase moisture in a recipe. In general, recipes that call for pureed fruit, sour cream or yogurt are ones you can rely on for a moist product. In case your recipe does not call for these things, using brown sugar instead of white sugar to add moisture.

What gluten-free flour is best for cakes? ›

What's the best gluten-free flour for baking? Bob's Red Mill gluten-free 1-to-1 baking mix is my favorite gluten-free all-purpose flour blend for baking. It has a mild texture and plenty of "stick" thanks to a blend of sweet rice flour, brown rice flour, and sorghum flour, plus some starches and xanthan gum.

What is the trick to baking with gluten-free flour? ›

Gluten-free baked goods often benefit from extra liquid to hydrate the flour blends, eliminate grittiness, and achieve a less dense or dry texture.

Should you let gluten free cake batter rest? ›

Let Your Batters & Doughs Rest

We recommend covering your batters and doughs and letting them rest for at least half an hour. Note: This will also help batters become thicker and doughs to firm up.

Can I just replace flour with gluten free flour? ›

Gluten-Free Bread Flour can be swapped 1:1 for all-purpose flour and bread flour by both weight and volume.

Can you overbeat a gluten free cake? ›

Over-mixing can beat too much air into the batter and cause it to collapse. Less is more with mixing a gluten free cake batter — try to blend the batters for less than one minute.

What helps gluten-free cakes rise? ›

Gluten-free flour blends don't have the same elasticity as flour containing gluten so often the cakes don't rise as much or will sink after rising. To combat the flat cake problem, I add ½ tsp of bicarbonate of soda to the recipe even when using a self-raising gluten-free flour blend.

How do you make gluten-free cakes less crumbly? ›

If the flour you are using doesn't already contain xanthan gum, combining quarter of a teaspoon to every 200g/7oz of gluten-free flour will help to improve the crumb structure of your bake. You can also use guar gum or a combination of the two.

Why is my gluten free cake sinking in the middle? ›

YOUR CAKE IS SINKING IN THE MIDDLE OR NOT RISING

You may not have used enough raising agents. I do recommend experimenting with double action baking powders. Otherwise try using 25 percent more chemical raising agents (baking soda or baking powder) if you're converting a recipe to gluten free.

How do you make cake batter taste better? ›

Using your Mad Hungry Spurtle Set, sift and stir your eggs, fats, and liquids, to achieve that velvety batter we all know and love.
  1. Replace Water with Milk or Buttermilk.
  2. Substitute Oil for Butter.
  3. Use More Eggs.
  4. Add Vanilla Extract.
  5. Make It a Chocolate Lovers' Cake. ...
  6. Decorate Your Cake Like A Pro.

Can I use sour cream instead of eggs in cake mix? ›

Since sour cream has a higher fat content it can actually mimic the fats in an egg and make our recipe extra rich and moist. One egg can be replaced by ¼ cup of sour cream. It acts as just the perfect egg substitute!

Can I skip sour cream in cake? ›

The sour cream adds moisture and fat to the recipe so it will change the texture and the moistness of the cake. You might try substituting yogurt. You can also use 7/8ths of a cup of milk and 3 tablespoons butter.

Why should you cream your cake batter? ›

The creaming method is usually the initial and most important step in the recipe and involves beating fat/s and sugar together until the mixture is light in colour and his increased in volume. It is important for creating air, needed for leavening and thus helps to produce light and fluffy cakes.
