Use your freeze blast to create a raft in the water below, but make sure you throw it all the way to the other end. From that raft, use your grapnel boost to bust through the soft wood panelling on the ceiling. You can then grab the trophy with your Batclaw.

Your looking for the exit that's directly behind a gargoyle. I can't remember which one it is, so just grapple on one, and cycle around the room, using the camera to look behind Batman. One of the gargoyles will have a doorway behind it. Just hop off, and go through.

Yup. For frozen ones in the water, just toss a freeze grenade near it to create a floating platform. You can then just pick it up. For the high ones on a wire, you can toss a batarang to make it fall down.
