These keto soup recipes are the perfect way to warm up! This keto chicken taco soup, for example, is so good you’ll forget your name.
Ingredients
1/2 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1 pound boneless, skinless chicken thighs
Salt and pepper, to taste
2 tablespoons coconut oil
1/4 cup chopped white onion
1/2 jalapeno, diced
1/2 green bell pepper, chopped
1/2 cup diced tomatoes and chilies, drained
6 cups chicken broth, reduced sodium
1 tablespoon tomato paste
1 tablespoon butter
1/4 cup cilantro, chopped, divided
1 avocado, pitted, peeled, and diced
6 tablespoons sour cream, for topping
1 1/2 cups mild cheddar cheese, for topping
Optional: Keto-friendly tortilla chips for garnish
Instructions
- Whisk chili powder, cumin, and garlic powder in a small bowl. Sprinkle half of the mixture over the chicken thighs, and season with salt and pepper.
- Heat coconut oil in a large pot over medium-high heat. Sear the chicken. Reduce the heat and continue cooking until the chicken reaches an internal temperature of at least 165°F, about 15 minutes. Remove the chicken and set it aside.
- In the same pot, add the onion, jalapeno, and bell pepper. Sauté for 2 minutes, then add the tomatoes and chilies. Scrape the bottom of the pot with a wooden spoon. Continue cooking until they soften, about 5 minutes. Stir in the remaining seasoning.
- Pour in the chicken broth and add the tomato paste. Stir well and bring the soup to a boil. Continue boiling for 1-2 minutes, then reduce the heat to a simmer.
- Cut the chicken into bite-sized cubes and return it to the simmering soup along with butter. Simmer for 15 minutes. Turn off the heat and sprinkle half of the cilantro over the soup.
- To serve, add diced avocado to each bowl, followed by a dollop of sour cream, shredded cheddar cheese, cilantro, and tortilla chips, if using.
- Enjoy!
Notes
- Customize heat with jalapeño seeds; leave them in for spice, take them out for mild.
- Let the soup sit before serving. The flavors develop as it rests, making it even more delicious.
